Overlooking the iconic Table Mountain and V&A Waterfront, the Heirloom Restaurant at Cape Grace has introduced a limited-time wine pairing menu in collaboration with Waterford Estate.
This five-course experience showcases a thoughtful fusion of local flavours and fine wines, offering an immersive journey into Cape Town’s culinary heritage.
Rather than pairing wines with existing dishes, Heirloom has taken a reverse approach, crafting each course around a carefully selected wine.
As sommelier Alvezo Abrahams explains; “By letting the wines guide the dishes, guests can appreciate how each wine influences the flavours of the ingredients.
"This way there is a seamless interaction between food and drink, enhancing both without one overshadowing the other".
The meal begins with the Blanc de Blanc Cap Classique 2018, accompanied by tuna on toasted brioche, roasted black garlic aioli, and crisp apple sticks.
The Elgin Sauvignon Blanc 2024 follows, paired with rainbow trout complemented by pepper salsa and avocado purée.
This is followed by pork belly glazed in white wine-orange beurre blanc, expertly matched with the complex notes of the 2015 Chardonnay.
For the main course, guests can choose between The Jem 2017 Red Blend or the Kevin Arnold Shiraz 2016, both served alongside a beef duo featuring fillet and tongue, accompanied by salted candied tomatoes and a rich Jem jus.
The evening concludes with a poached pear dessert, served with Waterford’s Heatherleigh NV Dessert Wine, rounding off the meal with a well-balanced sweetness.
Throughout the evening, the sommelier and team provide insights into the pairing selections, making this more than just a meal—it is an engaging exploration of flavour.
This collaboration with Waterford Estate marks the first in a series of wine pairing events at Heirloom, setting a high standard for what’s to come.
